All Ingredients
saffron rice, roasted eggplant, cucumbers, arugula, red onions, roma tomatoes, kalamata olives, oregano, olive oil, red wine, cumin, coriander, cardamom, clove, tzatziki sauce (plain greek yogurt, cucumber, garlic, dill, mint, lemon juice), salt, black pepper or hummus (garbanzo beans, olive oil, tahini, lemon juice, garlic, salt, black pepper, cumin, paprika)

How to Prepare

Microwave

Remove sauce cups & set aside. Transfer cold salad to separate container, shake dressing & toss. Mix rice & eggplant, cover, microwave for 1–1:30 min. Add protein to rice. Top with salad. Enjoy with sauce.

Stove

Remove sauce cups & set aside. Move salad to separate container, shake dressing & toss. Mix rice & eggplant. Sauté in a non-stick skillet over medium/high heat until hot. Add protein. Top with salad & enjoy with sauce!
